Since the start of the 18th century Timmermans has being brewing true lambic beers, with 30% of wheat used in the process in the town of Itterbeck and with it the being exposed to the air and microbes in the Senne Valley and it being created by spontaneous fermentation. It was taken on in 1993 by Martin’s Finest Beer Selection, a distributer in Antwerp, who has preserved both the brewing process and the area it is brewed in.
